Illahe is constantly attempting to be lower intervention in their winemaking, from using native yeasts, to using bicycles to power pumps in the winery to bypass electricity. Spicy, earthy, a touch of smoke and more structured than the cuve Miette, this lands with more intensity but is surprisingly graceful, stunning pairing with Northwest classic Cedar Planked Salmon.
